The olive tree is grown on an area of over 250 hectares: The collection system is still manual. The oil is pale yellow with green reflections and a slightly hazy appearance. It always has acidity below 0.7. Almost all leonfortesi farmers produce oil in the traditional way, mostly intended for family consumption. Recent cooperatives produce a bottling of extreme quality that retains all the renowned characteristics of Leonforte.
