The Frascatula is a thick cornmeal or maize polenta, spread throughout the island, it is prepared by pouring the flour in boiling water, cooking it for about ten minutes and then flavoring it with vegetables (such as borage, chicory and wild fennel) or other ingredients that vary depending on the village. With an increased quality of life came lard and bacon, which made the dish much more tasty. It is ideal for consumption on cold winter evenings, the “Southern polenta” was cooked in every home, because in ancient times there was lack of other food and it was easy to prepare. This dish, even though poor and almost forgotten, has nothing to envy, however, of the most sumptuous and well-known dishes.
