On a farm to discover how to prepare the Sicilian ricotta cheese

The  itinerary  recommends   to take part in  the interesting demonstration of the production of the  famous  Sicilian  ricotta c heese  on a charming farm surrounded by  nature not far  from the  medieval  towns of  Piazza Armerina and Aidone.

 

It is advisable to go to the old farm in the early morning so you can watch how the traditional ricotta cheese is made, the Sicilian dairy product, by far, excellent in its kind and used as the basic ingredient for delicious recipes both sweet and savoury. A moustached- farmer will show the different ways of making ricotta, starting from boiling the milk, from which he will first obtain the cheese and then, adding more milk.  He will explain how ricotta is produced by watching the slow process of double cooking the whey to obtain the classic consistency that characterizes this dairy product. With much concentration to detail and patience, the various steps and the importance of the right ingredients will be explained.

At the end of the demonstration, you will be invited to taste the delicious ricotta cheese accompanied by warm bread (also homemade) and local red wine, all served in 18th century style on the farm. Immerse yourself in the unspoilt nature of the Sicilian hinterland enjoying the colors, smells and flavors of a land linked to its traditions

In the afternoon, you can reach the nearby historic centers of Piazza Armerina or Aidone for a walk through the center of town enjoying the sunset after a full day of work and the many emotions offered. You will over-night at one of our excellent accommodation facilities in the area.
