Wheat has always been a pillar of the culture and food for Sicilians, who have interpreted it in thousands of ways. The Pagnotta del Dittaino is one of them, it so unique that it has been recognized as PDO. To the eye, has a round shape with a size ranging from 500 to 1,100 grams, but it can also be half of a sliced loaf. The crust is moderately strong and the soft part tends to be yellow, compact and very resilient. The Protected Designation of Origin includes the use of natural yeast and fine durum wheat semolina from the territory, which make it very delicious and compact. Local tradition still refers to the goddess Demeter/Ceres, imagined to be on the earth producing vigorous vegetative prosperity that brought men to call her the “goddess of the harvest.”
